Healthy Kick

Sooo I have been trying to get on the healthy train for a little while now and I have been quite successful lately. I have started running every morning (two days in) for at least 30 minutes and I have made an effort to buy healthier groceries. Let me tell you that all of this is easier when you have the support of others. I go running with my boyfriend's brother and because he's athletic he keeps me motivated. I also have started cooking healthy foods and while everyone doesn't agree, they do agree to at least taste what I make.

Yesterday, I kicked it off by making some chocolate zucchini cakes topped with walnut. They were excellent!!! The zucchini lends moistness so it was a nice healthy addition. Recipe can be found here . For dinner I made cauliflower pie. May sound gross, but it was delish, healthy and oh so easy. The cauliflower pie even won over my mother in law who LOATHES cauliflower. So needless to say, I felt pretty damn good about myself.

This morning, I used the tempeh that I purchased yesterday in an egg white omelette and I was completely satisfied with the taste. Tempeh is a whole grain meat substitute made of soy that basically tastes like pine nuts. It's delicious and easy to prepare. The way I prepped it this morning was by pan frying it in some olive oil spray and seasoning it with Adobo, then adding my egg white mixture and voila! Tasty and easy. I will def be incorporating it into other meals.

Next up on the menu will be Italian Baked Eggplant. I'll be using seitan which is another meat substitute. Now don't get me wrong, I still love meat, I'm just trying to cut back wherever I can.

Ohh ps! I bought some almond milk and I am in LOVE!! So much tastier and healthier than cow's milk. And if you purchase it at Wal-Mart or the like its less than 3 bucks! Not bad.
